I love a good long weekend of grilling, sipping, snacking, and maybe one too many chips and margaritas.

No regrets, but let’s be honest, the reality of Monday is calling. ☎️

If you’re anything like me, you’re craving something a little lighter, a little fresher... but still delicious and satisfying.

So I pulled together a few of my go-to 1-hour dinners to help ease back into real-life meals:

Sesame Crusted Salmon

It’s peak salmon season, so if you can get your hands on some good Alaskan wild salmon, this one’s a must.

You can serve it on its own, but I love turning it into a colorful sesame salmon bowl with rice, avocado, cucumber, edamame, and quick pickled veggies.

Chicken Shawarma Bowl

Shawarma chicken is usually wrapped in pita, but this version turns it into a flavorful rice bowl topped off with pickled onions, cucumbers, tomatoes, and a dollop of hummus (or tzatziki).

The Italian classic made with ground chicken for a easy weeknight pasta dinner.

Mediterranean Lemon Chicken

Tender chicken cooks gently with lemon, potatoes, olives, and a generous blend of savory herbs for a burst of flavor.
